Botarga (Boutargue, Drahm Hout)
Botarga is a dried and smoked roe of grey mullet, traditionally pressed and then enclosed in wax coating, although it is not a must.
A whole sack of the fish roe is smoked and dried, and creates a great condiment. At Gordon's, we carry it in 2 forms: whole sacks, and powdered. Both products are available at any time. Whole Boutargue
This wonderful mullet roe is smoked whole, while still in the egg sack.
As a Tunisian delicacy, it is thinly sliced and served with olive oil and scallions, although there are many other

Boutargue Powder
This French-manufactured condiment is a staple in many North African and French-Morrocan recipes. Use it as you would grated parmesan or salted cod for fragrant salty and smoky falvor. Sprinkle it over your pasta or salad.
At $18 for 100gr (ab. 4oz) it is an affordable alternative to a whole butarga that needs to be grated or shaven into thin strips before use.
