Rubyfish
This beautiful cousin of red snapper is wild-caught from clean, pristine waters of New Zealand. Very tasty. Mild and just a little sweet.
Product applications
You can use it in any snapper or perch recipe. It turns out great when smoked with hickory wood, and the flesh is firm enough to be grilled.
Need a simple marinade?
Combine equal parts of low-sodium soy sauce with grapefruit juice, add a pinch of cayenne pepper, and let the fish sit in the mixture for at least 30 minutes but no longer than 4 hours. Shake off excess marinade, top the fish with chopped scallions, and bake for 15 minutes at 375F.
